The Merlot grows on our steep southern slope above Bolzano in Oberlaitach at 550 meters above sea level, also on a soil of quartz and porphyry.

Management

Close to nature, a lot of manual work and very little use of machinery


Vinification

Destemming, traditional mash fermentation in big wood barrels with fermentation temperature control; subsequent racking, malolactic fermentation in barrique barrels, where it matures for a further 12 months; then 6 months storage in stainless steel barrels and 3 months bottle ageing


Characteristics

In the glass, it displays a brilliant ruby-red colour with garnet reflections. On the nose, it reveals a complex bouquet of ripe wild berries, black cherries and plums, complemented by elegant notes of vanilla, cocoa, cedarwood and subtle hints of spice. On the palate, the wine is full-bodied and elegant, offering concentrated fruit, well-integrated tannins and a harmonious balance between freshness and oak maturation. The long finish is marked by dark berry flavours, fine chocolate and delicate spicy nuances.



Food recommendations

An excellent companion to rich meat dishes such as braised beef, game, lamb and beef tenderloin. It also pairs beautifully with roasted meats, mushroom dishes and aged hard cheeses. Its elegant structure and refined oak notes make it an ideal choice for festive menus and enjoyable evenings of fine dining.
